Perfect Balsamic Dressing

Try this:

4 T balsamic vinegar
half cup olive oil
large scoop of dijon
1 finely chopped garlic clove
a little more pepper than you think
pinch of salt

emulsify it, or shake it ALOT.

I think this is it for the perfect balsamic dressing. I tried it a bunch of ways, with a lot more stuff in it, but this version is totally delicious.

    Also, in the spirit of sharing, I discovered my favorite lemon variation last night (added to a salad of spicy greens and slivered almonds, which might have contributed):
    4 tbsp olive oil
    2.5 tbsp fresh lemon juice
    1 finely chopped garlic clove
    1/3 tsp salt
    1/4 tsp black pepper
    and (this is the clincher, if you can do dairy): 1/2 cup aged parmesan, tossed into the salad before serving.
    YUM.
